White tea is the least processed of all — no pan-firing, no rolling, only withering and drying, which leaves the leaf nearly untouched. It spans silver needles and Gòngméi from Fúdǐng, where the leaf is sun-withered, alongside Yúnnán whites. The cup is soft and delicate, with light honey and hay, and it ages gracefully — “one year tea, three years medicine, seven years treasure”.
