Pu'er

Yúnnán pu’er, made from sun-dried large-leaf tea (大叶种) — a tea that transforms over time. Shēng (raw) matures naturally over years; shú (ripe) is fermented by wet-piling (渥堆) and is born already dark and smooth. It includes lǎo chá tóu, gōngtíng and dà jīnyá. Full reference at puerh.app.
